No-Bake Peanut Butter Ice Cream Sandwich Delight

My best friend in middle school used to order an ice cream sandwich every single day in the school cafeteria. I can still picture it so clearly -- the outdated tile floors and the royal blue pull-down, picnic-style tables that folded out from the cinder-block wall, overlooking the basketball court below.


She’d go through the lunch line (wearing her Delia's corduroy skirt) after finishing her packed-from-home lunch, come back to the table with her ice cream sandwich… then casually smear a thick layer of peanut butter across the top and devour this glorious mid-day treat. Oh to be young like that again!


At the time, I didn’t fully appreciate the genius of this peanut butter + chocolate combination. Though Katie seemed to appreciate it.


That appreciation came later in college when my husband introduced me to the peanut butter fudge milkshake from Cookout. Have you had it? If you have, you know exactly what I am talking about. Wow. Fireworks. Suddenly, everything made sense.


And don’t you remember those college days? Casually driving through a fast-food hangout spot to grab a massive milkshake… right before bed?! We didn’t even think twice about it. Ahh, youth.


Needless to say, this recipe was born from two of my favorite people’s love for peanut butter and chocolate.


And now… mine too.


So somewhere between middle school ice cream sandwiches and late-night college milkshakes, this dessert was born.




This recipe is so quick. So easy. It can be thrown together in 2 minutes and then popped in the freezer for 30-45 minutes before serving. This crowd pleaser is a winner every time!


Ingredients:


Dairy-free ice cream sandwiches (I like So Delicious brand)

Organic Peanut Butter

Cool Whip (So Delicious brand again)

Enjoy Life dark chocolate chips


*I use the So Delicious and Enjoy Life brands because they are dairy-free, but you can use any brand you like best.






Directions:


Start with a shallow glass serving dish

Make an even layer of ice cream sandwiches as your base layer

Layer peanut butter, spreading evenly across the top of the ice cream sandwiches

Spread the entire container of Coco Whip across the top of the peanut butter layer

Sprinkle (or douse😉) with chocolate chips

Put in the freezer for 30-45 minutes before serving chilled
